Achilli Enoteca al Parlamento was founded in the late 60s and from 2013 also becomes a high level cuisine. The rooms that once were a wine warehouse are being renovated, creating a soft, warm and welcoming environment like an exclusive English club, where the wood paneling alternates with wood paintings in shades of green, red and cream. Massimo Viglietti is a chef, or rather a “cook” (as he likes to define himself) who wants to be more a craftsman than an artist. For him, gastronomy is a form of language that expresses creativity, culture, happiness, harmony, beauty, poetry, complexity, magic, humor, provocation: the information transmitted by a plate is appreciated through the senses but, according to Massimo Viglietti, they are evaluated and rationalized even with reflection. The chef likes to break the patterns of the classic structure of the dishes: in fact, he implements a genuine revolution, the result, first of all, of the symbiosis between the world of sweet and that of salt. one year after their arrival in Rome in 2015, Achilli Enoteca al Parlamento and its chef are awarded with the Michelin star.
