Bottarga Borealis

Every year, from January to April, the North Atlantic cod, called Skrei, comes down to the clean, clears waters of the Arctic Norwegian coast to spawn.

The brave fishermen challenge the cold, black sea to catch the cod and bring it to shore where the Bottarga Borealis is produced.

The hand-picked roes from Skrei are salted and hung outside on traditional drying racks in the cold winter to start the slow drying process which matures the roes ever so gently.

After 10-15 weeks of drying, the roes are ready to be taken down, inspected and packed as Bottarga Borealis.
